One Pot Pasta
All you need for this is...
Pasta (any kind you like, I usually use the ones that look like bows)
1 Can Diced Tomatoes
1 to 1 1/2 cups Vegetable Broth
Spinach
Vegetable of your choice (I usually use mushrooms)
Cherry Tomatoes
1 Sliced Onion
1 Diced Garlic clove
Basil
1 tbs Olive Oil
Salt + Pepper

First, you start out by heating up a pot and adding the Olive oil. Then you add the onion and garlic clove to the pot and wait until they're nice and soft. Afterwards you can add the pasta, diced tomatoes and the vegetable broth. You will know that you added enough liquid, when the pasta is completely covered and it seems more like a soup. (The pasta will absorb all the liquid, so don't you worry!) In order for this to cook appropriately, add the lid to the pot and start cutting up your veggies. Once you cut up the veggies, add them to the pot. After about 10 minutes of cooking, the pasta will have a creamy texture, the only remaining steps are adding the basil and seasoning it with salt and pepper. Enjoy!
Lentil Soup
This recipe is perfect for cold, rainy days (especially when you live in the Netherlands), all you have to have for this is...
1 tbs Olive oil
Fresh veggies (carrots, onions, garlic, zucchini and spinach)
1 cup Vegetable broth
1 Can Diced Tomatoes
1 Cup Red Lentils (rinsed)
Salt + Pepper

First, you heat the olive oil in a large pot, then you add the diced onion and carrots and sauté for about 2 minutes. After that you add the vegetable broth, diced tomatoes and the lentils. First bring it to a boil and then lower it back to medium heat. After about 15 to 20 minutes, the lentils should be softened, then you can add the zucchini and spinach and season it with salt and pepper. When everything seems fully cooked, spoon it up and enjoy your warm cold weather food! #healthy and #cheap

Chocolate Peanut Butter Overnight Oats
You might think "Wow, big news, do I even need a recipe for this?", but it is the little things that can make overnight oats especially outstanding. So in order to make it outstanding, you will need...
1/2 Cup Oats
1/2 Plant based milk (I usually use Almond milk, but Soy milk is cheaper)
1 Banana (1/2 mashed, 1/2 cut into pieces)
1 tbsp Peanut Butter
1 tbsp Cocoa Powder

First you start out by mixing the oats and the plant based milk together in a jar or a Tupperware, then you mash half of the banana with a fork and also add it to the mix. After you have stirred it properly, you can mix in the peanut butter and cocoa powder. Put a lid on top of it and leave it in the fridge over night. All you have to do in the morning, is add the rest of the banana and indulge! #plantbased
